A Fresh Idea for Turkey Leftovers
I trust that everyone enjoyed some time with family and friends over a meal or two or even three! We are very fortunate as a Steen family to have a happy, healthy family this year; so much to be thankful for! I am a pretty big fan of turkey and in some ways an even bigger fan of turkey dinner leftover concoctions. Whether it be hot turkey sandwiches, soups, chili etc., turkey is a great food for leftovers. What is your favorite turkey dinner leftover?
There are as many hot turkey sandwich variations as there are households who eat turkey. Here is a little twist on the traditional hot turkey sandwich:
You can find this recipe at: http://paninihappy.com/leftover-turkey-panini-turkey-jalapeno-melt-panini/
Turkey Jalapeño Melt Panini
8 slices sourdough bread
4 slices Monterey Jack cheese
Sliced pickled jalapeño peppers
Leftover roast turkey, sliced or shredded
1-2 tomatoes, sliced thinly, seeds removed
DIRECTIONS: Preheat the panini grill to medium-high heat. For each sandwich: On one bread slice, layer on a slice of cheese, jalapeños, leftover turkey and tomatoes. Spread a thin layer of mayonnaise on another slice of bread, and place it mayonnaise-side down to close the sandwich.
Grill 3 to 4 minutes until the cheese is melted and the bread is toasted. Cut in half, serve immediately and enjoy!
Don’t let too much time pass between those cherished visits with family and friends. Enjoy the fall season by getting outdoors and working up an appetite.
